Lisaura S. Bautista owns 3 hectares of land dedicated to coffee production in Las Pirias, Chirinos. Her, her husband and their 3 children live at the farm and tend to the coffee trees. The main variety she grows is Mundo Novo, which seems to give her coffee a different flavour profile to that of neighbouring farms. Once picked, Lisaura ferments the coffee for 2-3 days in a small concrete tank before washing. The coffee is then dried in a drying tent covered in blue plastic, which she says maintains the temperature better than transparent plastic, for around 15 to 20 days.
